These are Martha Stewart's Strawberry Cupcakes from her most recent book that I made nearly a month ago! So sorry for not updating sooner.
It definitely required extra time with the 2 cups of finely chopped strawberries. The recipe said to cook for 25-30 minutes and I cooked them for 18-20 minutes which was perfect. Too much longer and they definitely would have been too dry. I topped them with Strawberry Cream Cheese frosting. I added pureed strawberries to Martha's cream cheese frosting which made it too runny. I kept adding powdered sugar to thicken it up which made it way too sweet for me but no one else complained.
When I think of strawberry cupcakes I think of Duncan Hines strawberry mix where it's all pink and berry tasting. These were much different with the fresh strawberries. More like a vanilla cupcake with strawberries rather than a "strawberry" cupcake. They tasted very good and fresh but I wasn't sure I really loved the chunks of strawberries. Most people said they liked them. If I make them again I will try pureeing the strawberries for the batter. It's fall now though. Who wants strawberry cupcakes now? No one. That's who. I see some pumpkin cupcakes in my future . . . . .
These look yummy to me. I like vanilla with fresh strawberry's, I probably would of loved them.
